You already know that the best food comes from the simplest ingredients. And nothing proves that more than homemade dahi (Indian style yogurt).

Whole milk. A spoonful of yogurt. A few hours of patience. That is all it takes to make fresh, creamy, probiotic-rich dahi at home — the kind that tastes nothing like anything from a store, and the kind every Indian household has been making for generations.

I just published a brand new recipe on the blog, and I packed it with everything I know — the two-ingredient method, tips for making it thicker, a full guide for setting dahi in a cold kitchen (yes, it works in a Kansas winter!), and a troubleshooting section for every single thing that can go wrong and exactly how to fix it.
