The side dish that finally gets eaten✨

Crispy Air Fryer Zucchini (no breadcrumbs!!)

Hi friend!

Summer cooking should be easy. And delicious. And maybe a little bit spicy.

Here's the thing about summer vegetables: they're at peak season, which means they're cheap and gorgeous. But here's the other thing about summer vegetables: nobody wants a hot stove in June.

Enter: the air fryer. My new best friend. Yours too, about to be.

THE ZUCCHINI SITUATION

We've all heard that zucchini is "boring" statement before.

I can't even argue. We've all been there—a sad, mushy zucchini side sitting on the plate while everyone ignores it. It's the vegetable equivalent of showing up to a party nobody remembers you attended.

So I did what I always do: I added my favorite magic ingredient - chaat masala to it.

The best part? It took 15 minutes of hands-on time. Slice and sweat (do not skip this) the zucchini, season, air fry and finish with chaat masala. No sweating over a hot stove. No oil splatter. Just crispy, spiced perfection.

Craving more? Here are some other zucchini recipes:

You can find all my recipes right here on the blog — new ones added all the time! Thank you so much for being here. Now go have a FABulous day and I will see you in the next one!

Love

Vaishali!

P.S. — Still haven't signed up for my gluten-free thali cooking class series? Summer is the perfect time to learn. Light meals. Healthy ingredients. All naturally GF. Enroll here: Vegetarian thali and Non-veg thali

P.P.S. — If you love chaat masala as much as I do now, let me know. I might create a whole "chaat masala everything" series because honestly... it's a gateway spice. 🌶️✨

Afghani Chicken Without Cashews Hi friend! Today on The Kitchen Docs! Inspired by a dish from an Indian restaurant (The Goat) in New Zealand, this Afghani chicken without cashews builds its creamy base from yogurt, heavy cream, and a bright herb paste of cilantro, green chilies, ginger, and garlic. Blistered lemon slices, charred whole chilies, and golden caramelized onions make this version stand apart from every other recipe out there. It is weeknight-friendly, nut-free, and super...
